Set on the edge of the Petitenget area of Seminyak, Da Maria Bali is the brainchild of Australian famed restaurateur Maurice Terzini, in collaboration with Motel Mexicola’s Adrian Reed. With spectacular dining locations already established in Sydney such as Icebergs Dining Room and Bar (IDRB) and Da Orazio Pizza & Porchetta in Bondi Beach and The Dolphin Hotel in Surry Hills along with other influential dining venues, Maurice Terzini has a gift for dreaming the big picture and executing it, and is now turning his eye to establishing successful dining destinations in Asia with his first installment in the island of Bali.
Da Maria Bali boasts a menu that features an array of fun and accessible dishes that present a modern approach to simple, classic Italian flavors with pizza undoubtedly set to become one of its favourites. The pizzas of Da Maria are made from 24-hour fermented dough and cooked in local, Naples inspired lava stone ovens. A special dish worthy of mention is the traditional Italian Porchetta (whole local pig) marinated in local herbs and cooked slowly over coals. Seafood lovers can indulge their taste buds with such tantalising fare as Snapper Crudo with orange, fennel pollen, finger lime; Calamary St Andrea with ink aioli and rocket or House made pappardelle with king prawns, cherry tomatoes, chili and basil. The bar at Da Maria has a very ‘American’ feel and focuses on elegant simplicity with most drinks having the flavour profile of Campari or Aperol, blended with white spirits, local fruit and citrus.
