One of the must-try at Andaliman Restaurant is Peranakan or Baba-Nyonya cuisine executed by Chef Cahyo, the executive sous-chef.  Baba-Nyonya cuisine is a fine hybrid of Chinese and Malay flavours, using plenty of ingredients and methods from both cultures, and considered to be one of Southeast Asia’s finest.  In general, Chinese dishes are adjusted with the use of Malay spices and its cooking style is a unique hybrid of Chinese and Malay culture.

The restaurant definitely recommends Laksa Nyonya, a mouthwatering coconut curry soup known as a mainstay of Baba Nyonya cuisine. The dish is made with a fish-based gravy of prawns, combined with chicken, and served with thick rice noodles or thin vermicelli. Another famous dish you must have, is called “Ayam Buah Keluak” prepared using the seeds (known as keluak or black nuts) of the kepayang, a tall tree native to the mangrove swamps of Malaysia and Indonesia. The chicken and keluak are cooked for hours and coated with sautéed spice paste and tamarind puree, resulting in a tasty dish.  Most Peranakan dishes require a substantial amount of time to cook for all the flavors to mix into the gravy, which creates a delicious combination of flavours. To make one dish often takes a lot of time and effort, and sometimes it takes several days to prepare one dish.
