The culinary team of Azul Beach Club, led by Executive Chef Arief Wicaksono brings more than 30 years experience from his work in several countries with the diversity of his breakfast, lunch and dinner menus. These focus on a unique approach of ‘farm to table’ freshness. For a starter, a portion of cure Tasmanian salmon Carpaccio is a delightful treat, consisting of Tasmanian salmon served with fresh organic leaf, seaweed, avocado, radish, dehydrated beet and soy ginger dressing. The red snapper as the main course should not be missed. This brings the freshness of seafood to the table, with a fine mix of baby potato, tomato basil, fennel salah and a lemon butter emulsion. Wrap up the meal with a plate of sweet goodness in form of caramelia chocolate brownies with dark chocolate ice cream, white meringue, berries and cream.
