To be found at Banyan Tree Samui, Saffron is thrilled to be selected as part of the Michelin guide Thailand 2024, which highlight restaurants that are delivering exceptional dining experiences by pushing culinary boundaries while continuously reinforcing the rich gastronomic culture and heritage of Thailand.

As the signature Thai restaurant and now under the helm of a new sous chef, Mr Kitja Muakin, Saffron is an elegant dining establishment specializing in authentic Thai cuisine. Perched on a hillside above the lush Banyan Tree Samui resort, commanding spectacular sunset views across the sea, the menu at Saffron is a combination of traditional Thai dishes with a modern twist and innovative new ones. Some of the ingredients are locally sourced like sea-bass, squid, tiger prawn and cage-free eggs. Guests can choose from a la carte and Thai Testing menu.

Renowned for combinations of flavours through a delicate blending of Thai herbs and spices, this award-winning restaurant serves signature specialties such as Khong Wang Ruam, an appetiser for two featuring freshly prepared crisp rice noodle-wrapped prawn, grilled tender chicken breast satay, fried floppy seabass rice noodle rolls, and pomelo salad with tamarind sauce. Another must-try dish is Pu Nim Thod Yum Lychee Nham Sawaros, a salad dish made with crispy soft-shell crab, lychee salad, mint, lemongrass, and spicy passion fruit dressing.

For main dish, it is recommended to taste Gaeng Phed Ped Yang, which is a grilled duck breast red curry with sweet basil leaves, grilled lychee and pineapple compote. Vegetarian menu is also available to satisfy every tastebud.

To accompany their exciting menu, Saffron serves Thai herbs creation cocktails such as bitter sweet kafir lime made of reposado tequila, Aperol, fresh lime juice, egg white, kaffir lime leaves, and angostura bitter.

Saffron restaurant brings the same quality to its wonderful selection of gourmet Thai cuisine as the precious and unique saffron spice which, with 75 flowers needed to produce just one pound of saffron, is the very essence of refined delicacy. From its humble beginnings as simple curry house. Saffron has since leaped beyond its origin to become the award-winning dining experience that it is today, and the signature Thai restaurant of Banyan Group.
