Highlighting the Korean concept of sharing on table cooking, SI JIN offers a choice of meats which are prepared in-house and freshly cooked on smokeless grills at every table. There is a broad selection of meat cuts to choose from including dry-aged cuts from periods of 30 days to 200 days and premium wet-aged cuts. These are paired with starters and sharing plates created by incorporating Korean and Japanese techniques with wholesome local ingredients from the island.

The menu includes Starter, Sharing, Seabirdland, Dry Aged Beef, Reserve Cuts, Omakase Premium Cuts (ideal for 4) and Desserts. Open for dinner only, the service starts at 5.30 pm. You should start with a delicious appetiser of Wagyu Butter (Meyer lemon rosemary, Campagne boule, katsuo) and Uni “Yukhoe” (wagyu tartare, seaweed, and caviar). Then savour the 30 Day Aged California 9+ and 60 Day Aged Andong Soju Bone-In Ribeye 7+, in which each is cooked on a smokeless grill with an added handful of imported wood to enhance the flavour. Using such a simple cooking method, the end result for these high quality cuts of beef is juicy, tender meat that melts in your mouth and tastes incredible. Eight different selections of homemade salt are available so you can choose a variant that suits your liking.

To pair with such a specialist selection of meat, you will need to choose the right drink. A comprehensive choice of wines and a selection of classic and signature cocktails such as Ticket to Seoul Ticket to Seoul (a mix of rosella tea-infused soju, pink peppercorn, grapefruit, lychee and lemon) is available from the Si Jin’s sophisticated bar.
